This homemade tomato soup is inspired by traditional dutch recipes. It is extremely simple but holds a lot of flavor. The fact that it has only a few ingredients is great because most are usually on hand, so this is a dish that can be whipped up at any time.
Served with some fried bread this is a wonderful lunch, or a perfect side with supper.
You Will Need:
- 4 cups Water
- 6 Medium Tomatoes
- ¹⁄³ cup Flour
- 2 Shallots
- 2 tbsp Vegan Margarine
- 1 tsp Salt
Chop tomatoes, and slice shallots. Then add both along with 4 cups of water and the salt to a medium pot.
Bring to a boil and let simmer for 20 minutes.
Let this cool and then add to the blender in batches blending until smooth.
In a medium sauce pan melt the margarine and add in a little bit of the flour and some of the soup. Continue adding more flour and soup a little at a time and stirring until smooth.
Serve topped with a swirl of vegan cream, and a sprinkle of pepper, along with fried bread cubes. To make these simply cut two pieces of bread into cubes, and fry in melted vegan butter until golden brown.
